It depends which time frame ur looking at..
which decade of gaming are you all thinking about? if its this decade i would have to say either KOTOR 1 or 2
whereas in the 90's it would have to be Supremacy (Rebellion)

Seriously though, to date the best graphics from a SW game are from Republic Commando

Rogue Squadron III wins outright. I've played pretty much all the SW games and even though this is pretty old, nothing has surpassed it yet.

It's an in-game screen shot from the Gamecube. There is no arcade version.

actually, Sega made arcade versions of the Rouge Squadron/Rebel Strike games that were later on gamecube

Star Wars Arcade was made by Sega and was never released on any home console. The Rogue Squadron series was developed by Level 5 who have nothing to do with Sega.

Republic Commando has good graphics, the best i've seen (for a Star Wars game).
