I have three questions.
1. Are there any deleted scenes anywhere on the OT DVD box set?
2. If not, will Lucas ever include any OT deleted scenes in future releases of the trilogy?
3. Are there any notable OT easter eggs worth pointing out?

1. Well, sort of. In the Empire of Dreams documentary on the bonus disc, there's a few snippets of deleted scenes and test footage. No deleted scenes per se though.
2. Well, there's speculation that a future set featuring the entire Saga will include deleted scenes from the OT.
3. Yeah, there's a blooper reel on the bonus disc (if that's what you're asking for). Go to the main menu and press 1-1-3-8 on your DVD remote and enjoy.

I've never heard about it and I don't believe it. However, the ships in the background on Coruscant in TPM were inspired by the Enterprise.

Never heard that one, mind you it doesn't mean it's not true. But I doubt it.
None of my Star Trek friends have mentioned anything listed above and they would have.

There's no Enterprise in Return of the Jedi. However many of the distant background ships in the space battle were created with everything from wads of chewed bubble gum to one of the special effects guys' sneakers. I have read this fact in various books and heard the sfx guys talk about it in interviews. I believe it (based on the various sources) but I swear I've been looking for that damn shoe ever since Return of the Jedi was first released on video tape back in the mid-80's and I've never been able to find it.
...Nor have I ever read or heard anything from any reliable source describing which shot the shoe appears in.
As for deleted scenes, there was an issue of the "Star Wars Insider" magazine a few years back (sorry I don't know the issue number off the top of my head and I'm too lazy to go digging through my collection!) which featured a great article (including written descriptions and many never-before-seen photos!) of all the Original Trilogy deleted scenes.
As I recall, it discussed (and showed images from):
ANH: The Biggs and Toche Station scenes
ESB: Wampa Ice Creatures attacking the Hoth Base scenes; Luke getting weird medical care from 2-1B scene; and the Wampas vs. Imperial Snowtroopers scenes.
ROTJ: The Sandstorm scenes.
...among other things.
And this might be a little off-topic but...
In the mid 80's there was a great TV documentary (it was also available on video tape in the 80's and '90's) called: "From Star Wars to Jedi: The Making of a Saga", which showed the raw footage of the (at that time deleted) ANH Jabba the Hutt scene, with Harrison Ford talking to the human actor who was later replaced by the digital Jabba. "The Making of a Saga" was a great documentary, I watched it on TV several times as a kid and I was really disappointed that it wasn't included on the OT dvd box set "Special Features" disk. I'm a big fan of Jabba's palace and all the Star Wars aliens. And "The Making of the Saga" included some of the best, and most extensive, behind-the scenes footage of the creation of Jabba and all the other weird ROTJ aliens that I have ever seen. Don't get me wrong, I loved the "Empire of Dreams" documentary that appeared on the OT dvd set - that was surely the best coverage of the making of ANH ever. But, I felt that it just sort of skimmed over ESB and ROTJ, and I was a little disappointed by that, considering how much other great Behind-the-Scenes footage exits out there on both sequels.

I think if you listen to the commentary, the visual effects guys talk about it. Apparently, some fans had claimed that they had seen the Enterprise in the background during some scenes.
It was two ships flying close to each other that looked like the Enterprises two sections. If you watch them, you see they seperate further along in the scene due to one ship moving faster than the other.
Dunno if that`s what being referred to here.

I know they said they put the spinner ships from "Blade Runner" in the Couruscant air traffic, but I've never heard anything about the Enterprise. Maybe I'm wrong. Hafta look for it next time.
However, one of my favorite TPM easter eggs is in Palpatine's office. If you look in the background he has a statue of "The Maltese Falcon", the valuable statue that everybody was killing each other over in the classic Humphrey Bogart mystery film, "The Maltese Falcon". The only difference is, in The Maltese Falcon movie, the statue was black and the statue in Palpatine's office is white. But it is the exact same sculpt.
Lucas has said in various interviews and books that in fact Jabba the Hutt was based on the character of "Gutman the Fat Man", played by Sydney Greenstreet in "The Maltese Falcon". And if you watch that film you can totally see it. Greenstreet and Jabba have much the same personality and the exact same laugh.

He was also the padawan who interfered with Jocasta Nu and Obi-Wan in AOTC when OB1 asked about Kamino when JN put her nose in the sky when he said the charts was uncomplete... :)

No, they were specifically developed by LucasArts for 1994's TIE Fighter PC/Mac game. They've never featured in any movie.

Sorry for keeping this off-topic, but people have forgotten about his two daughters in EpIII--one as a Twi'lek, the other as a Republic Senator. So his whole family WAS in the PT.
As for OT Bloopers and Deleted Scenes, only the 1138 Easter Egg and various cut stuff and various bloopers (e.g. Harrison Ford saying "Schmuck" after a take in the Falcon) in the Empire of Dreams Doc. Aren't there bloopers at the end of Empire of Dreams as well?

Too bad Marcia wasn't. IMO, she was the real behind-the-scenes force that made GL the success that he became.
